Blackened Dijon Chicken

INGREDIENTS
1 ½ lbs. Boneless, Skinless Chicken Breasts
¼ Cup Dijon Mustard
3 Tbs. Blackened Seasoning 

DIRECTIONS

Preheat oven to 400°
Coat each chicken breast liberally on both sides with blackened seasoning.  Brush each side with Dijon mustard.
In a large, oiled skillet over medium-high heat, sear the chicken for 3 minutes on each side.  Remove chicken from pan and place on a baking sheet. Try baking it on parchment paper or spray some coconut oil spray on your baking dish before putting your chicken in the dish just to be sure it doesn’t stick..
Bake for 20 minutes. 

Prep Time – 10 Minutes
Cook Time – 30 Minutes

¼ Cup Dijon Mustard
3 Tbs. Blackened Seasoning: This is a nice, spicy seasoning that is great on just about any meat, poultry or seafood.  Some of my favorite uses for it are on pork chops, chicken, and salmon. Combine all spices and store in an air tight jar.

1 tsp. Basil
1 tsp. Cumin
1 tsp. Celery Salt
½ tsp. Oregano
