1-2 pounds chicken tenders
1 cup mayonnaise
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
2 cups panko bread crumbs
1/2 cup fresh grated parmesan
Preheat your oven to 400°F. Line a baking tray with parchment paper and an oven safe cooling rack if you have one. If you don’t that’s fine too. Spray the cooling rack with non stick spray.
Stir together the mayo and spices. Mix the parmesan into the panko bread crumbs.
Coat each chicken tender into the mayo mixture and then toss in the cheese and panko. Place them out flat on the baking tray.
Bake for about 20 minutes or until the chicken is cooked through out and a thermometer registers at 165°F.
