Cheese Ravioli Casserole with Beef

These are great recipes, and they kept us from eating take-out just about every night a few years ago. We were displaced due to a leak in our kitchen while we were on vacation. We arrived home to find ‘not so’ dry-wall peeling off wall studs, bathroom wallpaper in a heap on the floor, new Berber soaked through, and a gaping hole in the kitchen floor that went clear through to the lower level.
We were moved to a Marriott Towne Place Suites, and it was actually a fun experience – it was the winter of Snowmageddon. Five of us and our newly rescued hound in a 350 square foot, 2 bedroom, 1 bath suite. There was a teeny, weeny kitchen with a teeny weeny stove. My slow-cooker was an absolute necessity.
We were assured by our insurance company and their contractor that our repair was a ‘two week job.’ We were residents at the Marriott from October through March. And just to make it interesting, I had begun homeschooling the kids a couple of months prior to the leak mishap.
Here is the first of our favorite recipes………


1lb. ground beef
26-oz jar spaghetti sauce – mushrooms and bell pepper sauce give this a little boost
9-oz pkg cheese ravioli
1/2 Cup Italian bread crumbs
1 Cup shredded mozzarella cheese
1/4 Cup grated Parmesan Cheese (optional)

1.  Brown ground beef in a large non-stick skillet over medium-high heat.  Drain.
2.  Combine browned beef and spaghetti sauce in large bowl.
3.  Spoon 1/3 cup of spaghetti sauce mixture into slow-cooker to cover the bottom.
4.  Place ravioli on top.  (The OCD in me places each one carefully, but I am sure it is okay if they are haphazardly tossed into the slow cooker)
5.  Cover with remaining sauce mixture.  Top with bread crumbs.  Sprinkle with mozzarella cheese and Parmesan cheese, if desired.
6.  Cover and cook on low 2.5 hours to 3 hours or until heated through, being careful not to overcook the pasta.

1 lb. ground beef
26-oz jar spaghetti sauce – select your favorite –

1/2 cup Italian bread crumbs
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional)
